Black Bean Burger Recipe

☼ 3 cups of dry black beans☼ 1 onion☼ 3-4 cloves of garlic☼ Black pepper (to taste)☼ 2 tbsps. of hot sauce☼ Salt (to taste)☼ Thai chili peppers (to taste)☼ 1 egg☼ 1 ½ cup of bread crumbs☼ ¼ cup of vinegar☼ Olive oil/coconut oil/vegetable oil☼ Optional: Two cans of black beans instead of dry beans
Steps
- Let 3 cups of black beans soak in at least 5 ½-6 cups of water for 1-2 hours.
- Let veggies soak in a bowl of water with about ¼ of a cup of vinegar for about 5-7 minutes.
- Strain and rinse beans, and add them to slow cooker.
- Add 6 cups of water to slow cooker.
- Add a tbsp. of salt to help the beans soften. Cover with lid.
- Cook on high for about 4 hours, stir once every hour and check on softening progress.
- Once beans are cooked, strain water, and add to a large bowl.
- Strain veggies. Then, cut onion, garlic cloves and chili peppers into small pieces.
- Add about 2 tbsp. of olive oil to pan and stir fry onion, garlic and chili peppers together until golden.
- Begin to mash the beans. Then, add in salt and black pepper to taste, egg, hot sauce, bread crumbs, stir-fried onion, garlic, chili and any other seasonings you’d like. I like to use Sazón or Cajun seasoning.
- With a palm-sized amount, start making the black bean patties.
- On medium heat, add 2 tbsp. of olive oil to pan, and fry the black bean burgers.
- Enjoy with dipping sauce, homemade French fries and bread from 7/11.
*You can substitute dry beans with two cans of pre-softened black beans from Tops Market*You may also use a deep pot with a lid to boil beans for a few hours instead of a crockpot
Spicy Dipping Sauce[gallery ids="16194,16195,16196" type="square"]Ingredients☼ 3 Thai-sized tomatoes☼ 3 cloves of garlic☼ ~3 Thai chili peppers (to taste)☼ 1 onion☼ ~3 tbsp. of hot sauce (to taste)☼ Salt (to taste)☼ Black pepper (to taste)☼ 1 cup of regular unsweetened mayo☼ 1 tsp. of olive oil☼ ½ cup of vinegar☼ Tupperware with lid to store in fridgeSteps
- Let vegetables soak in a bowl of water with about ½-1 cup of vinegar for about 5-7 minutes.
- Strain the vegetables, and cut the tomatoes into fourths. Cut the onion into smaller pieces.
- Put the tomatoes, chili peppers, olive oil, onion, garlic, hot sauce, salt, pepper and mayo into a blender or food processor and pulse. You want the dip to be mildly chunky.
- Pour into Tupperware, and refrigerate for at least an hour, and then, it’s ready to eat!
